Pork Tenderloins w/honey-chipotle bbq sauce
My version of the incredibly awesome McRib® - Grilling Pork Tenderloins (three tenderloins, cut into 2" pieces then flattened into steaks).
Grilled Pork Tenderloins, rubbed with chili powder, cumin, brown sugar, garlic powder & salt/pepper served with homemade Honey Chipotle bbq sauce, candied corn w/cayenne and sweet potatoes. I don't like taking pictures of not-meat items so the corn & potatoes aren't pictured. Now, if I wrapped some bacon around the not-meat items I would have happily taken pictures.
Absolutely one of my favorites to make and eat.

Bacon Cheddar Burgers w/Grilled Tater Skins

Sirloin Steaks with Roasted Garlic Butter
Two 1" thick Sirloin steaks (sale!)
Homemade Roasted Garlic Butter
Whole head of garlic, cut off the top
Place in center of a aluminum foil square
Drizzle top of garlic with EVOO
Seal the garlic in the foil
In-direct heat for 45-50 mins @350°

Allow garlic to cool & then combine in a bowl:
Squeeze the garlic out of the cloves
4 Tbs of softened butter
4 Tbs of softened butter
1 tsp of Dijon mustard
1 tsp of Worcestershire sauce
1/2 tsp of Kosher salt (if using unsalted butter)
The beef was rubbed with a commercial burgundy rub and after they came off the grill, a couple teaspoons of the garlic butter is added. This helps give a tasty richness to the sirloins.

Atomic Buffalo Turds & Chicken Quesadillas

aka Bacon-wrapped, Cheese-stuffed Jalapeno Poppers
Monterey Jack cheese, Bacon & Jalapeno apple-wood smoked @275°
We used some Jalapeno's from our garden!! Awesome!
Surprisingly, there was still quite a bit of melted cheese left in the Jalapeno.
They sell special pepper holders that keep the jalapeno's upright while barbecuing.
Chicken Quesadillas
with South-western seasoned chicken, Monterey Jack and Cheddar cheeses and onion
Very good stuff. We also made bacon wrapped, bite sized chicken nuggets, dredged in brown sugar and chili powder (not pictured). They're a mess on the grill, so they were baked in the oven @350° for 25-30 minutes.
It will definitely be a TUMS® night!

My Hurricane Irene Preparedness Plan
It's been awhile for many things... Blog post, pulled pork and an approaching hurricane. My last big hurricane preparedness plan was Red Lobster next to Kendall Toyota, 19 years ago (plus a couple of days).
8.5 pound Boston Butt, rub put on yesterday at 6pm and started smoking today at 8am @250°. I expect it to be @200° between 5 & 6pm tonight.

2-1/2 lbs Pork Loin.
Jack Daniels.
Pork Rub.
Brown Sugar (how come you taste so good).
Dijon Mustard.
And Bacon.
Hickory smoke at 375° indirect heat until temp = 155°
Sweet glaze added during grilling.
This was absolutely killer good. The whole family loved it. I can't wait for the next sale on Pork Loin.

The burgers are half-pounders of ground beef, combined with Mushrooms, Onion and Garlic sauteed in the bacon pan, with fresh out of our garden parsley. The Bacon Jam is pretty spicy-hot and complements the burgers quite well.

Spice Rubbed T-Bone with Grilled Potato Skins
T-Bone and two small strip steaks
The rub is great but was pretty spicy - for once, I will cut back on the cayenne the next time I use this rub.
Grilled Potato Skins
First bake the potatoes until nearly done, then cut in half length-wise. Scrape out some of the potato so that there is about a 1/2" of potato left inside the skin. Brush some garlic butter on both sides of the taters and grill about 4 minutes on both sides. Add some cheddar and bacon during the last minute of grilling. Sour cream and chives finishes them off.
