Pork Tenderloins w/honey-chipotle bbq sauce

My version of the incredibly awesome McRib® - Grilling Pork Tenderloins (three tenderloins, cut into 2" pieces then flattened into steaks).

Grilled Pork Tenderloins, rubbed with chili powder, cumin, brown sugar, garlic powder & salt/pepper served with homemade Honey Chipotle bbq sauce, candied corn w/cayenne and sweet potatoes. I don't like taking pictures of not-meat items so the corn & potatoes aren't pictured. Now, if I wrapped some bacon around the not-meat items I would have happily taken pictures.

Absolutely one of my favorites to make and eat.

Bacon Wrapped Brined Shrimp w/Chipotle BBQ Sauce

and Atomic Buffalo Turds!

Basted during grilling with Chipotle BBQ Sauce
(Bullseye Original kicked up with chipotles, cayenne & red chili flakes)
This was sweat on the forehead inducing stuff - especially when used as a dipping sauce. Whoa.

Sirloin Steaks with Roasted Garlic Butter

Two 1" thick Sirloin steaks (sale!)

Homemade Roasted Garlic Butter
Whole head of garlic, cut off the top
Place in center of a aluminum foil square
Drizzle top of garlic with EVOO
Seal the garlic in the foil
In-direct heat for 45-50 mins @350°

Allow garlic to cool & then combine in a bowl:
Squeeze the garlic out of the cloves
4 Tbs of softened butter
1 tsp of Dijon mustard
1 tsp of Worcestershire sauce
1/2 tsp of Kosher salt (if using unsalted butter)

The beef was rubbed with a commercial burgundy rub and after they came off the grill, a couple teaspoons of the garlic butter is added. This helps give a tasty richness to the sirloins.

Atomic Buffalo Turds & Chicken Quesadillas

Atomic Buffalo Turds (ABT's)
aka Bacon-wrapped, Cheese-stuffed Jalapeno Poppers
Monterey Jack cheese, Bacon & Jalapeno apple-wood smoked @275°
We used some Jalapeno's from our garden!! Awesome!

Surprisingly, there was still quite a bit of melted cheese left in the Jalapeno.
They sell special pepper holders that keep the jalapeno's upright while barbecuing.

Chicken Quesadillas
with South-western seasoned chicken, Monterey Jack and Cheddar cheeses and onion

Very good stuff. We also made bacon wrapped, bite sized chicken nuggets, dredged in brown sugar and chili powder (not pictured). They're a mess on the grill, so they were baked in the oven @350° for 25-30 minutes.

It will definitely be a TUMS® night!

My Hurricane Irene Preparedness Plan

It's been awhile for many things... Blog post, pulled pork and an approaching hurricane. My last big hurricane preparedness plan was Red Lobster next to Kendall Toyota, 19 years ago (plus a couple of days).

8.5 pound Boston Butt, rub put on yesterday at 6pm and started smoking today at 8am @250°. I expect it to be @200° between 5 & 6pm tonight.

Smoking with Apple Wood.

For those of you that don't know, my birthday comes along in a little over a month. If you are looking for ideas (and who isn't??) here is one: Get a gift for Slash

Remember, Lowe's gives a 10% Veterans discount, every day, all day.... but ONLY with a valid VA issued photo ID (which leaves me out since the VA denied me health benefits recently and therefore, the ID card), see here for details: Lowe's Veterans 10% Discount news release

Jus' sayin'

Seriously, everyone in the impending path of the hurricane, be safe and take your preparedness very seriously. We know what its like to go thru a real hurricane, and this certainly is stacking up to be a real bad-ass hurricane and with that comes the inherent dangers. Be safe!

Teriyaki Marinated Chicken

Indirect med-high heat for 40 minutes.

Since it's boob meat, check for 170° internal temperature and clear juices.

Tonight there will be beef. And Bacon. And maybe even corn.

A weekend of grilling with meat and not-meat

I, Slash, grilled not-meat stuff....
Monster garden Zucchini planks
with a nice not-meat rub

Corn on the Cob
grilled with our garden fresh parsley butter

And I also grilled/BBQ's real food, too....

Beer Can Chicken
with fresh Rosemary from our garden

JD's Pork Loin

Seven pounds consumed
(we had company over!)

Top Sirloins with Roasted Garlic Butter
on bone, of course.

Who knew that the not-meat stuff would be really, really good. Yeah, I was surprised, too. For full disclosure though, in my opinion, the meat was still better.

And in the evening, I'm making Waffles!

My family-wide famous Vanilla Waffles aren't just for breakfast.

We're having them for dinner tonight. I mix in chocolate chips in the kids ones.

Wife's way to eat them.

Bacon Jam

Bacon Jam on Mushroom Burgers

The burgers are half-pounders of ground beef, combined with Mushrooms, Onion and Garlic sauteed in the bacon pan, with fresh out of our garden parsley. The Bacon Jam is pretty spicy-hot and complements the burgers quite well.

Trying something with Bacon for a change

Need one pound of Bacon.
Need some Coffee.
Need some Chipotles.
Need some Garlic.
Need some Spices.

Need some patience as it simmers for 2 to 2-1/2 hours.

Any guesses?

It's Bacon Jam, in use in this post (link).

Spice Rubbed T-Bone with Grilled Potato Skins

Along with homemade bbq-steak sauce for the steaks

T-Bone and two small strip steaks

The rub is great but was pretty spicy - for once, I will cut back on the cayenne the next time I use this rub.

Grilled Potato Skins

First bake the potatoes until nearly done, then cut in half length-wise. Scrape out some of the potato so that there is about a 1/2" of potato left inside the skin. Brush some garlic butter on both sides of the taters and grill about 4 minutes on both sides. Add some cheddar and bacon during the last minute of grilling. Sour cream and chives finishes them off.

Barbeque Chicken (with 'shroom Bombs!)

New recipe for homemade bbq sauce. I tripled the amount of Cayenne :)

And made a few with our beer can chicken rub for the kiddies.
