Smoking: Pork Rib End Roast


Bone-in, Pork Rib End Roast (7 bone, loin)
using my JD Pork Glaze
These will be cut into pork chops when they're ready

Smoking with Hickory over indirect 350° heat
This has been on for 45 minutes
figure 1-1/2 - 2 hours total

Sirloin Steaks with Roasted Garlic Butter

Two 1" thick Sirloin steaks (sale!)

Homemade Roasted Garlic Butter
Whole head of garlic, cut off the top
Place in center of a aluminum foil square
Drizzle top of garlic with EVOO
Seal the garlic in the foil
In-direct heat for 45-50 mins @350°

Allow garlic to cool & then combine in a bowl:
Squeeze the garlic out of the cloves
4 Tbs of softened butter
1 tsp of Dijon mustard
1 tsp of Worcestershire sauce
1/2 tsp of Kosher salt (if using unsalted butter)


The beef was rubbed with a commercial burgundy rub and after they came off the grill, a couple teaspoons of the garlic butter is added. This helps give a tasty richness to the sirloins.

Atomic Buffalo Turds & Chicken Quesadillas

Atomic Buffalo Turds (ABT's)
aka Bacon-wrapped, Cheese-stuffed Jalapeno Poppers
Monterey Jack cheese, Bacon & Jalapeno apple-wood smoked @275°
We used some Jalapeno's from our garden!! Awesome!

Surprisingly, there was still quite a bit of melted cheese left in the Jalapeno.
They sell special pepper holders that keep the jalapeno's upright while barbecuing.


Chicken Quesadillas
with South-western seasoned chicken, Monterey Jack and Cheddar cheeses and onion



Very good stuff. We also made bacon wrapped, bite sized chicken nuggets, dredged in brown sugar and chili powder (not pictured). They're a mess on the grill, so they were baked in the oven @350° for 25-30 minutes.

It will definitely be a TUMS­® night!

My Hurricane Irene Preparedness Plan

It's been awhile for many things... Blog post, pulled pork and an approaching hurricane. My last big hurricane preparedness plan was Red Lobster next to Kendall Toyota, 19 years ago (plus a couple of days).

8.5 pound Boston Butt, rub put on yesterday at 6pm and started smoking today at 8am @250°. I expect it to be @200° between 5 & 6pm tonight.

Teriyaki Marinated Chicken



Indirect med-high heat for 40 minutes.

Since it's boob meat, check for 170° internal temperature and clear juices.



Tonight there will be beef. And Bacon. And maybe even corn.
